Into a bowl add:
75g Butter
1 cup Chopped Dates
¾ cup Soft Sugar
1 Orange rind
1 cup Boiling Water
Mix till butter melts then leave until mixture is cooled to room temperature.
While waiting:
pre heat oven to 180ºC or 350ºF
grease and flour a loaf tin.
Mix in 1 Beaten Egg
Gently mix in:
2 cups Flour
3tsp Baking Soda
1 cup Walnuts
3tsp Baking Soda
1 cup Walnuts
Add to the tin and cook on the middle oven shelf for about 40mins checking the top for burning and, late into cooking, skewer. Any cake mix on skewer means it needs longer.
