High energy winter food or if you're running around lots.
Pre-heat oven to about 150 Celcius.
Add to a warm saucepan (low heat)
175g Butter
175g Sugar
Tbsp Honey
Heat through so sugar starts to breakdown.
Thoroughly mix in:
300g/ 3 cups of rolled oats.
Grease and flour a cake tin/ oven proof dish – it should be big enough that the mixture is about an inch thick when compressed.
Mix in:
dried fruit/ nuts/ choc chips etc... Whatever you fancy.
Add to tin and compress mixture with the back of a spoon.
Cook for about 20 mins.
Notes:
Think about moving to the middle of the oven if top is browning. If it goes brown then it may be over cooked on top and will be hard.
Cool before trying to extract from tin as it will shrink a little on cooling.
Temperature of oven is dependent upon oven type so a bit of experimentation needed.
Also experiment with different mixtures.
